📝 Ingredients:

  • 2 lbs ripe tomatoes (Roma or vine-ripened), halved

  • 1 bulb of garlic

  • 1 large onion, sliced

  • 2 tbsp olive oil

  • Salt & pepper to taste

  • 1/2 tsp crushed red pepper flakes (optional)

  • 2 cups vegetable broth

  • 1/2 cup heavy cream or coconut cream

  • 1/4 cup fresh basil leaves

  • 1 tsp sugar (optional, to balance acidity)

🍳 Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Place halved tomatoes, onion, and garlic (wrapped in foil) on a baking sheet. Drizzle with olive oil, salt, and pepper.

  3. Roast for 30 minutes until tomatoes are soft and slightly caramelized.

  4. Squeeze roasted garlic out of skins into a blender. Add roasted tomatoes and onion, basil, broth, and red pepper flakes. Blend until smooth.

  5. Pour into a pot, stir in cream, and simmer for 5–10 minutes. Taste and adjust seasoning.
