📝 Ingredients:
2 lbs ripe tomatoes (Roma or vine-ripened), halved
1 bulb of garlic
1 large onion, sliced
2 tbsp olive oil
Salt & pepper to taste
1/2 tsp crushed red pepper flakes (optional)
2 cups vegetable broth
1/2 cup heavy cream or coconut cream
1/4 cup fresh basil leaves
1 tsp sugar (optional, to balance acidity)
🍳 Instructions:
Preheat oven to 400°F (200°C).
Place halved tomatoes, onion, and garlic (wrapped in foil) on a baking sheet. Drizzle with olive oil, salt, and pepper.
Roast for 30 minutes until tomatoes are soft and slightly caramelized.
Squeeze roasted garlic out of skins into a blender. Add roasted tomatoes and onion, basil, broth, and red pepper flakes. Blend until smooth.
Pour into a pot, stir in cream, and simmer for 5–10 minutes. Taste and adjust seasoning.
Serve hot with fresh basil on top and a drizzle of cream or olive oil if desired.
